1.Add eggs, sugar and mustard powder to a blender and churn for 1-2 minutes
2.Keeping the blender on, add oil slowly spoonful by spoonful, churning all the time
3.Keep adding oil gradually, till it starts to thicken. Once the sauce thickens lightly, keeping the blender on, pour the oil in a thin stream from the cup directly in large quantities.
4.Churn till all the oil is used up and you get a thick mayonnaise dressing.
5.Add salt and vinegar and churn once more.
6.Remove from the mixer to a bowl. Chill for 1-2 hours before use.
VARIATIONS
1.GARLIC MAYONNAISE- Crush 3-4 flakes of garlic and add to the prepared mayonnaise.
2.MINTY MAYONNAISE- Add 6-8 crushed mint leaves to the prepared mayonnaise.
3.GREEN MAYONNAISE- Parboil and drain I cup spinach leaves. Puree in a mixer and add to the prepared mayonnaise.
