8 small celery sticks, thinly sliced 1 onion, finely chopped 3 cups water 1 tablespoons plain flour 2 tablespoons light sour cream 2 tablespoons grated cheese 1 tablespoons chopped fresh coriander 1 teaspoon lemon juice

1. Boil the celery and onion in 1/2 cup water in a large saucepan till the onion is soft.
2. Blend flour in 1/4 cup water till smooth.
3. Stir gradually into the onion mixture.
4. When smooth stir in remaining water.
5. Stir constantly till the mixture boils and thickens.
6. Reduce heat. Simmer covered for 5 minutes.
7. Stir in sour cream, cheese, parsley and lemon juice.
Serve hot
